Would it be possible to have a sit-down (not take out) restaurant that only served one item?
Apparently there are several famous Cha Ca restaurants in Hanoi. Cha Ca is a dish of boneless seasoned fish pieces that has been partially cooked before being brought to the table. The waiter starts up a large Bunson burner and sautés the fish in oil, then adds a huge bowl of greens. Each diner has a plate of rice noodles which he water cuts with scissors into 4 sections and places one quarter in a bowl that rice is usually served in. Some fish and greens are put on top of the noodles, then some peanuts, a spoonful of fish sauce, some green onion which had been sliced into the thinnest threads possible, and thin slices of Chili pepper. Eat the bowl and repeat 3 more times. Cha Ca is the only thing on the menu and costs $6 per person. They do actually have 2 types of beer on the menu. Absolutely delicious.
